Summer Work

by Peter 7/21/2011 2:05:00 PM
The main tasks we are doing in the woods this summer include maintaining and improving our tubing collection system.  We will be expanding the pipeline a little bit, bringing a couple hundred new taps into our collection network, and hopefully increasing our total production.  We have wanted to do this for a while, but it wasn't until we had the Reverse Osmosis machine up and working this year that we felt comfortable that we had enough time to process the extra sap that we expect to collect.

A New Record: 382 gallons of syrup!

by Don 4/14/2011 2:47:00 AM

A combination of excellent winter/spring weather, nearly record amount of snow this year (5th snowiest winter) and the gentle pull of the vacuum system on the taps resulted in an unexpected amount of sap flow.  This year the sap flowed through a special filter designed to remove any impurities, passed through a germicidal UV light and was refrigerated before being concentrated to 8% and flowing through the evaporator. Processing the sap as quickly as possible yielded high-quality syrup.

Reports from new and old customers indicate this may be the tastiest syrup ever!!! We hope you will enjoy one of nature's finest products and let us know what you think.
