The sap flows early in the spring when the daytime temperatures rise above freezing (32 F) and drop back down below freezing in the evening. In our region, we watch the weather forecasts and typically place our taps from mid-February to early March.
In our 20 years, we have seen a trend towards tapping earlier in the year. We started our syruping by suspending bags from the spile and collecting the bags of sap in to lager buckets. As we've expanded our operation we have gone to a modern tubing system. This has allowed us to collect all of the sap throughout our forest in to one collecting tank, which is then pumped to the sugar house as needed. This means more efficient collection and processing system for our sap.
